Our Wine

Cupitt’s Winery makes a selection of boutique wines using estate-grown grapes and grapes grown around NSW that are available for tasting and purchase from the winery’s cellar door and restaurant.

Rosie Cupitt, the winemaker at Cupitt’s Winery, studied viticulture at Charles Sturt University and has more than a decade of vintage experience including vintages in France and liasons with Italian winemakers to further her wine knowledge. This European influence has encouraged her to take a more traditional approach to the wine-making. The wines are matured in a beautiful underground wine cave where everything from fermenting to barreling is done.

Rosie’s philosophy is to make wines that go well with food and to let the grapes dictate the final wine style with each variety. Wild yeasts are used in some varieties to allow the grape and winery ‘terrior’ to heavily influence the flavours of the wine.

With the small quantity of wine that we make of each variety we are able to make single vineyard wines, which directly represent the region in which they are grown. These regions include:

Ulladulla, Shoalhaven Coast, NSW (Estate Grown)
Our vineyard is situated 3km from the coast between the towns of Ulladulla and Milton adjacent to Burill Lake. The maritime climatic conditions dictate the light style of wine we produce from our grapes. Our soils vary from a light sandstone to a richer, volcanic monzonite soil. Varieties include Semillon, Sauvignon Blanc, Verdelho and Cabernet Franc.

Mittagong, Southern Highlands, NSW
This cool climate vineyard is situated 680m above sea level west of the Old Hume Highway in Mittagong. The soils are red/grey basalt over clayloams. With the cool nights, warm days and well tended vines this vineyard produces high quality fruit. Varieties include Chardonnay, Sauvignon Blanc, Merlot and Cabernet Sauvignon.

Canyonleigh, Southern Highlands, NSW
This vineyard is situated on the drier western fringe of the Southern Highlands in the lighter country of Canyonleigh. Soil is sandy loam interspersed with ancient riverstone. At 600m above sea level the cool nights and long dry growing season is well suited for red fruit. Varieties include Syrah.

Tumbarumba, Southern NSW
known as a region that produces premium fruit Tumbarumba is situated on the western foothills of the snowy mountains. It is one of the highest grape growing regions in Australia ranging from 500m to 800m above sea level. The soil is basalt formed from the ancient granite rock dominating the region. The cool, long growing season concentrates the flavours and accentuates the varietal characters of the fruit. Varieties include Viognier, Syrah and Pinot Noir.
